That said, other than the cost, how much trouble is it to have a few more zones (more wall units) with one outdoor condensor so that you have more control over each room? I could easily split it up into 4 zones of 7,000 btu each. I just couldn't access them all from one side of the house.

The more indoor units you add, may require a manifold to link them all together.
That makes the installation a little trickier than say a basic 2 zone set up.
Without seeing the floor plan, it's hard to say exactly what would work best for your scenario.
Based on your description, a multi headed system would likely work best in the long run.

How has the pandemic been for business anyway, I'd imagine people working from home finally realizing their climate control sucks would benefit your market.

Last early spring people were hesitant to have the service or installation guys in the house.
Once summer hit and temperatures climbed, they were damn happy to have them in when the A/C went down.
