We strive to make zero mistakes. We have fired people because they dont care about their mistakes. But they do happen.
95% of the time the people will politely point out the mistake and let us correct it. No big deal.
BUT OMGFBBQ!! Some people act like you just insulted their whole family and existence because you put mustard on the burger by mistake. I had a guy damn my family and business to doom because his poutine was cold.
And we get old bored people call the health department on us because they have nothing better to do and want to feel important. We have never had a violation and the health dept person comes in with their "We have to do this" attitude and checks the whole place out and always green lights us.
When I eat out, it has to be a very serious wrong to make a stink. I can count on one hand how many times in 50 years that has happened. And I often get wrong food or prep or whatever. I just eat it.
Got attitude from the hostess @ Riva Grill in South Shore last night. Like she was doing us a favor when we showed up. The place is a massive money maker. My drink was $19. Corkage was $20. Crazy busy, a few fuckups but all in all an amazing experience when you consider all that could go wrong. I spoke to a manager briefly. Over 300 employees. All i sniveled about was the hostess.

Fuck that. I've also done all 3. Yes, many people suck and many people don't. It's not too much to ask for the servers, cooks and other assorted staff to perform their job as expected. That's a lazy attitude and you not wanting to address poor employees. Dealing with rude customers is part of a servers job. Cooking the food correctly is the cooks job. Making sure they do their job is your job. I thought you were saying it is the customers job to make sure they are doing their job, by complaining and pointing out mistakes. Of course it is the managers job to do that.

I missed this one. You are wrong. I have worked in restaurants, only very briefly as a waiter. Yes it sucks, but that's the job. I am always a very good customer, and a regular. I don't get mad, don't raise my voice. People who harass helpless customer service people are assholes.
In college I was told by a girl / waitress that her job was to manage the kitchen staff to make sure they prepared your order properly. If the food isn't cooked right or timely, she knows it is coming out of her tip. Her pay is all about being your advocate in the kitchen. Otherwise you may as well be eating at a counter service type restaurant.

I would never be a server at a place that makes you tip out the kitchen. I know that is a new trend but that is bullshit. I'll complain about service if it's genuinely shitty service. If it's some minor thing I'll just accept it and it might affect the tip and whether I go back. Had an ex who seemed to just love complaining, like it was part of the night out for her, nipicking every little tiny thing. I just found that embarassing. Stiff upper lip chaps, if they haven't actually shit in the soup just pick the fly out and soldier on.

I view the table service and the food preparation as two separate things that go into the overall restaurant experience. I've had lousy food with excellent service, and truly shitty service with wonderful food. But one thing I did learn working in the back of the house: the food is what the food is, how the owner and/or chef want it to be. If it's not up to my tastes, I can accept that and move on to another restaurant. About the most to expect of complaints about the food is a big "well, sorry..." And maybe a comp. Service is another thing. I want the server to greet me, take my order, and deliver the food and drink that I requested, as well as drop by once in a while to make sure I'm satisfied. I do not need them to entertain me, in fact I'd rather they just leave me alone unless I need something. So I'll tip to that accordingly, usually starting as 15-20% on the full amount according the the level of service for that kind of restaurant. I do not punish the server for the quality of the food, unless they start acting awfully defensive about it. The server didn't make it, so why should they get the brunt of the bitching? That's the manager's job.
If you can't be a good example, you can still serve as a horrible warning.
