Did somebody mention cheese?
Colby by itself is very good. Monterey Jack by itself is also very good. Oddly enough, ColbyJack is a little lacking. Its not bad by any means and is exceptionally versatile but there are other cheeses, depending on your need, that most likely fulfill your requirements better.
Personally, I love a quality provolone.
A top quality cheddar is also hard to beat.

1 lb of spicy ground sausage, 1 can of spicy rotelle and a block of the very best Velveeta all mixed together in a warm pot is really good on chips. Don't accidentally get any on your fingers and wipe your forehead or your tongue will beat your brains out.

Good philosophy.
I mean, a good fresh mozzarella in a Caprese salad is awesome.
How in the hell can you compare a Colby Jack with a 24 month Parmigiano Reggiano?
Or a good Burrata?
Different cheeses fressh/vs aged all have their uses.
