1 lb of spicy ground sausage, 1 can of spicy rotelle and a block of the very best Velveeta all mixed together in a warm pot is really good on chips. Don't accidentally get any on your fingers and wipe your forehead or your tongue will beat your brains out.

I mean, a good fresh mozzarella in a Caprese salad is awesome.

How in the hell can you compare a Colby Jack with a 24 month Parmigiano Reggiano?

Or a good Burrata?

Different cheeses fressh/vs aged all have their uses.

Cheese platters are like my favorite things in the world. In my fridge there's always Asiago, Cabot Really Sharp Vermont Cheddar, blueberry goat cheese, and port wine cheese. I put them with greek feta olives, gabagool, dry salami and crackers. Around these parts charcuterie is a big fuckin deal.

Get a round of camembert, unwrap to the wax, slice is shallowly like a pizza, drizzle with some extra virgin olive oil and some fresh rosemary. Bake at 425 for about 10-15 mins and serve with a French baguette. Blissful

theres this spot in napa that we go too. the make the fresh mozzarella at your table. they stretch it and serve it hot on this house made bread. they drizzle it with olive oil and this really course salt and pepper. it is one of the best things i have ever eaten. during the right months they serve sliced house grown heirloom tomato with it. dude that shit is fire

Been twenty years or so, but when I worked in Naples, Italy, took the USO tour of a caseficio in Caserta. Saw the water buffalo, watched them make the mozzarella fresh. Holy shit is was fantastic.

And I agree, Insalata Caprese is insanely good. Olive oil, tomato & fresh mozz go so well together. Then sop up the juices with a good sourdough bread.... heaven.
