I've been seeing a lot of ads for this Japanese knife and I'm curious how it would handle and if you ever or possibly could make one.

What you are seeing on the upper spine of the picture you posted are hammer peens. They are generally ground away, but some like the look.

I was thinking the same. There is a reason a Western chef's knife is shaped and weighted the way it is, it's a shape that gives the most utility in use and is easiest and safest to hold and handle. That hole and your finger in it along with the skinny-ass handle looks like it would be tiring to hold after a few whacks and not really steady.
