Yeah, the whole idea of a Waltons parody definitely sounds like it could be interesting for those into that sort of thing, but not sure it's really been done yet. As for ideas, it’s tricky, but something with the family dynamic—maybe some “goodnight” scenes that take an unexpected turn. Definitely keep the copyright thing in mind though.
