I am looking to try to expand what i make as I will get into a rut and easy fairly often then get bored with it. So, assuming any of you know how to cook, what are your go-to quick meals? I'm a chunk of meat and veggies guy. Tonight was a spicy Philly cheesesteak with queso and peppers, tomatoes, and pickles from the garden.

Quick Greek chicken with potatoes
Marinate bone in, skin on chicken thighs with olive oil, lemon juice, garlic, salt pepper, oregano for 4 hours
Pat thighs dry, heat oven to 425
Toss potato pieces with EVOO, salt and pepper. Roast on a sheet pan for 15 mins
Remove from oven, place chicken on top of potatoes. Roast for 35-40 mins
Remove, sprinkle with chopped dill and feta cheese
Those potatoes will be the star, as they cook drenched in wonderful chicken fat
