that's probably about right. a big turkey 20-ish pounds. should take around 4 hours at 350 F.

Me either. But the more I think about it, might not be the best method for beef. I would try it with pork ribs on a smaller scale. One day, I will be trying a beef neck. I will have to clear out a lot of freezer space for it.
