You know, I have to say the pork shoulder roast is about my favorite cut. For my smoker that's the go to. Lately I've been smoking it with no rub and finishing it in the instapot with herbs, garlic, spices, and usually apple cider vinegar. Billing the drippings down with a touch of brown sugar makes a really good BBQ sauce as well. Always love a good pork shoulder steak too.

mesquite is great to cook on. grilling steaks on mesquite coals is as good as it gets. I use mesquite to smoke things that don't cook real long, like ribs or chickens, etc. Anything 3 or 4 hours or less. But for big pieces of meat, like briskets or pork butts, its just too strong of a flavor. I never use mesquite for anything like that.

but, if you get a chance to have some mesquite on hand, i would highly recommend it.
