Oh and if you haven't tried them before, smoked turkey legs are awesome. Especially if you cure them with Prague Powder #1. Like the turkey legs at the Disney parks.

Yeah the tendons are pain in the ass, but they are relatively easy to remove.

My family traditionally does a macaroni and gravy or a lasagna for the holidays.
sasauage balls are basically biscuit dough mixed with cooked breakfast sausage and cheese (and jalapenos or whatever else) and rolled into balls and baked until done. they are like a deconstructed sausage biscuit you would get for breakfast. about the size ofa ping pong ball.
