Because there is no way to ensure that the ballot was completed by the person it claims.
Signatures have to match how much more proof do you need
Signatures can be forged very easily.

Why do you not want to protect the sanctity of our elections? (I know the answer)

How much does your signature match between what it looks like in the tiny strip on the back of a credit card as opposed to scrawled over a large blank piece of paper? The signature on my driver licence barely matches much with what I write on a restaurant receipt.

And who's making the judgment on what's a match? Actual trained forensic document examiners, or "Joe the van driver, he can tell and stuff!"?
